Easy Mexican Spinach Enchiladas Recipe

If you like Mexican food and if you are a fan of spinach, I suggest you try these Easy Mexican Spinach Enchiladas Recipe that made with delicious and flavor vegetables. In this recipe, we use tortillas it is better to make them cheesy and hot then eat.

 

Ingredients

Ingredients Qt
Corn  1/2 glass
Pea  1/2 glass
Scallion  1 pcs
Spinach  250 gr
Mashed tomato  1 glass
Capsicum  Half of one
Carrot  1 pcs
Garlic  1 clove
Tortila bread  3 pcs
Salt and pepper Required an amount

 

 

Preparation

Step 1: Place spinach into a pan and add vegetables.

Mince garlic and scallion then add it to the mixture.

Season enough salt and pepper then stir and saute.

 

Step 2: Pour one spoon of the mixture in the middle of the tortilas.

Then roll the bread.

 

Step 3: Pour some oil in a dish and make it oily then place the rolled.

Pour mashed tomato on the bread.

 

Step 4: Add some corn and peas.

Preheat the oven on 180 C and let it cook for 20 minutes.
