Carrot stew (Khoreshte havij)

Ingredients

Ingredients Qt
Julienned carrot  2 glasses
Chicken drumstick  5 pcs
Prune  30 pcs
Tomato paste  1 tbsp
Fried onion  1 tbsp
Saffron  required an amount
Turmeric  required an amount

Preparation

Step 1: Pour some oil in a pan and fry the drumsticks. Put it aside.

Step 2: Pour some oil again and add fried onion and tomato paste then start to saute. Add some turmeric and saffron.

Then Pour in enough water to cover the mixture. Let it cook for 30 minutes.

Step 3: Saute the carrots over medium heat with oil.

Step 4: Add prune to the stew and cook for 10 minutes.

Add carrots to stew you can serve it with rice.
