Persian Eggplant kuku
Kuku is a Persian egg dish similar to an Italian frittata. This Vegetarian Persian Eggplant Kuku Recipe is wonderful for brunch, lunch or dinner. It is also great for picnics because it tastes amazing cold as well as warm.
|Mashed garlic||1 tsp|
|Oil||required an amount|
|Salt and pepper||required an amount|
|Turmeric||required an amount|
Step 1: Peel the eggplant and grate it.
Add mashed garlic to the eggplant then add spices and stir.
Step 2: Pour flour and add an egg to the mixture.
Step 3: Heat oil in a pan over medium heat then pour the mixture and smooth the top with the back of a spoon.
Let it cook each side for 10 minutes.
