Parmesan eggplant (parmigiana)

|Olive oil||3 tbsp|
|Salt and pepper||the required amount|
Step 1: Heat olive oil over high heat.
Fry eggplant slices for 5 minutes until browne on both sides.
Step 2: Fry garlic.
In a baking dish, put a layer of eggplant slices. Top with a thin layer of tomato. Add mozzarella and garlic.
Continue layering eggplant, tomato mozzarella and garlic to fill baking dish.
Step 3: Preheat oven to 180C and let it cook for 20 or 30 minutes.
Add parmesan cheese when you want to serve the food.
