Ghromeh sabzi

Ghormeh sabzi is the quintessential Iranian recipe. It is a stew prepared with fresh herbs that is considered to be the national dish of Iran. It is also favored in present day Azerbaijan and Iraq.

 

Ingredients

Ingredients Qt
Chopped meat  300 gr
Red bean  1/4 glass
Dried lemon  2 pcs
Minced vegetables

(parsley, spinach, leek and fenugreek)

 500 gr
Salt and pepper  required amount

Preparation

Step 1: Wash the vegetables in a large bowl, then dry and chop finely. In a large skillet, heat vegetable oil over medium heat and sauté the fresh vegetables for about 15 minutes, while stirring occasionally. Set aside.

 

Pour some oil in a pot and saute vegetables with beans and meat. Add salt and pepper.

 

Step 2: Cover with water and bring to a boil on high heat. Then, lower the heat on medium heat and let it cook for about 2 hours.

 

Step 3: After 2 hours add dried limes and let it cook for 20 minutes.

 

Step 4: For preparing rice, wash it then pour it in a pot and add water, oil and salt. Let it cook for 30 minutes.
