The Traditional Iranian Ash Reshteh Recipe
The Traditional Iranian Ash Reshteh Recipe is a thick vegetable and noodle soup. There are many different kinds of Ash in Iran but Ash Reshteh is the most famous and popular one among all. It is mostly served with whey and sometimes with vinegar.
|Pinto bean||1/4 glass|
|Noodle soup||200 gr|
|Fried onion||1 tbsp|
|Dried mint||1 tbsp|
|Ash vegetable(Chopped spinach, parsley and coriander)||500 gr|
|Salt and pepper||required amount|
Step 1: Put the chickpea, white bean, lentil and pinto bean in a large pot. Pour water and let it cook for 2hours.
Step 2: Add vegetables and break up noodles soup into half and add it to mixture. Let it cook or 30 minutes.
Step 3: Slice the onions and garlic, saute them in a pan with oil until the color turns golden.
Step 4: Saute the dried mint into oil.
Serve ash reshteh in a large bowl with whey and fried garlic and onions and mint.
