Dizi (abgoosht)

The Tasty And Traditional Dizi Recipe is a popular highlight of Persian cuisine, is traditionally cooked in a small stone crock pot or a metal cooking pot. The history of abgoosht goes back hundreds of years ago when it was only made with lamb and chickpeas. However, with the introduction of the new world foods into Iranian cookery and the addition of new ingredients such as potatoes and tomatoes, this modest meat and chickpea soup became a more substantial and tastier meal.

 

Ingredients

Ingredients Qt
Chickpea  1/4 glass
White bean  1/4 glass
Potato  1 pcs
Onion  1 pcs
Meat  200 gr
Dried lemon  1 pcs
Tomato paste  1 tbsp       
Water  1 glass
Salt and pepper  required amount        
Turmeric  required amount        



 

Preparation

Step 1: Pour beans and chickpeas in a pottery pot. Add tomato paste.

Peeled onion and potato, cut in quarters.

 

Step 2: Add onion to the dish. Place the meat in the pot then add all spices.

Pour 1 glass water. Let it cook on medium heat for 1.5 hour.

 

Step 3: Add dried lemon and potato in last half hour.
